Winner of ‘Chopped’ on the Food Network

In early 2018, Sami of Croissami was selected to compete on the Food Network competition of Chopped, an acclaimed cooking show where chefs are given mystery ingredients and limited time to create a three course meal.  Sami flew out to New York City in June of 2018 for a long weekend and a very long day of filming with the crew and judges of the Food Network.  The episode, titled Breakfast, Lunch and Dinner was finally aired at the end of January 2020 in Season 44 episode 12 and Sami was the winner.  Watch her episode online at the Food Network or on Amazon.  Her mystery ingredients ranged from heirloom tomatoes and beautiful meyer lemons to pork roll ice cream, sea beans and canned beef ravioli.  Overall the experience was really amazing, positive and an affirmation of Sami’s versatile cooking skills and creativity.  Stay tuned for when Sami goes back to New York to compete on the Chopped Champions episode.

Croissami featured on ‘Sunday Suppers With Gigi’

Listen to this really fun conversation between celebrity Chef Gigi and Sami Gordon on Food Talk Radio.   Gigi and Sami talk and laugh about her time working on private yachts as well as working with famous chef Heston Blumenthal in the development kitchen of the 3 Michelin starred restaurant The Fat Duck before Sami moved to Sausalito, California to start Croissami.  Sami also talks about the unique challenges and rewards of being a small business owner in the Bay area and her inspiration to start Croissami, focusing on a variety of croissants more than six and a half years ago.

Renovations and 2019

The beginning of 2019 saw some major changes in the bakery space that we share with Cibo and Claires Squares.  We owe a huge thank you to Tera Ancona and Cibo for taking on the huge task of renovations.  Croissami subleases our space from Cibo and we maintain a small footprint with just myself and one other employee unless we have special events.  Since Cibo recently took over the main lease for the space, they also took on the responsibility of bringing the space up to current health department standards.  The space has been a bakery for 30 years but many things have changed over that time.  During the major renovations in January, the entire floor in the 1600 square foot space was replaced and a new walk in refrigerator was built.  Another prep sink was added, as well as an underground grease trap, the walls were repainted and a beautiful new rollup garage door was added to increase the natural light.  Most of the bakery was also reconfigured to create more work areas and a much better flow.

Overall these renovations have had such a positive effect on our business allowing us to take on much bigger orders and to become far more efficient.  We appreciate all of our customers and are excited to continue growing in the coming year.

Goodbye 2017 Hello 2018

Goodbye 2017 and hello to 2018.  The past year has been filled with excitement, frustrations, new customers, new bakery equipment, minor injuries, new co-workers, joys and disappointments…basically a microcosm of life in general.

Croissami continues to operate out of a large light filled commercial kitchen space located on Gate 5 Road in Sausalito.  We are lucky to share the space with 2 amazing women business owners, Tera Ancona of Cibo Bakery in downtown Sausalito and Claire Keane of Claires Squares. We are grateful to be in not only an always delicious smelling space, but one that is supportive of collaboration and learning.

May 2018 is the 5 year anniversary of Croissami, a benchmark amount of time for small businesses as we feel that we have made it, despite the ups and down, Croissami is thriving and we have all of our loyal customers to thank.  A big shout out to the following companies that have supported us over the years as well as everyone else we have not included.  You have helped to fulfill a dream.

Meet Sebastian, our new Operations Manager

Meet Sebastian von Nagel, our new Operations Manager. Croissami is lucky to have Sebastian taking over all operations while Sami is away on a 5 month sabbatical.  With an extremely varied background and a love and expertise in the art of baking, Sebastian will continue to fill your bellies and your hearts with all you have come to love and expect. If you get a chance, be sure to ask him about his eclairs.

The travel bug has once again snuck up on Sami and she will be  teaching classes and doing cooking demonstrations for America’s Test Kitchen onboard a Holland America Cruise Ship, the Prinsendam,  from September 2017 through January 2018.

Sami joins the Prinsendam in Amsterdam and will be traveling all through northern Europe, south through France, Spain, Portugal, the Greek Islands and all the way to Israel.  The ship will then cross the Atlantic and do a few trips in the Caribbean before heading down to the Amazon for a month.  After that amazing exploration and a bit more island hopping, Sami will depart the ship in Ft. Lauderdale and spend a bit of family time before coming back to Croissami.

Sami is excited for the worldwide itinerary and numerous opportunities for learning and inspiration.

As always please contact us directly for any questions, concerns or special deals.

Happy New Year to all and we look forward to hearing from you in 2017!

Caterer for Official NFL Tailgate Party

Croissami was thrilled to be a caterer for the Official NFL Tailgate Party.  The 50th anniversary of the Superbowl was a huge success in Santa Clara.  San Francisco did an amazing job of creating Superbowl City for Fans of the Carolina Panthers and the Denver Broncos.

Croissami was among several local businesses selected to help feed 10,000 lucky VIP guests.  We were excited to be inside this venue as the tickets were extremely hard to procure.  This high end event  featured performances by Seal and Sam Hunt.  Our team was amazing and had lots of fun serving over 4000 bacon and chocolate croissants and frittatas.  The experience was once in a lifetime and a great boon for business.

Croissami Specialty Bakery Recent Write up in Marin IJ

51afbce150351202000000f3_standardRead about Croissami in the Bread and Butter Column of the Marin IJ and how Sami is spreading her love of Croissants throughout Marin and San Francisco.

Anne Haight does a lovely job of summarizing Sami’s Croissami business venture in the June 12th edition of the Marin Independent Journal.

Sami talks about her motivation to start her croissant business after spending so many summers in the South of France and falling in love with the croissants, yet tiring of having just the plain and chocolate variety.  With many different seasonal as well as sweet and savory fillings, Sami has created this delivery based business to share the true joy of croissants with others.  Currently offices and corporations are the target market for these croissants since Sami does not yet have her own bakery, although they are great for families as well that wish to purchase a variety of croissants for home as well as special occasions. A dozen mini croissants are a perfect way to sample the varieties, and a dozen regular size are great to have around for snacks as well as lunch and breakfast.

Day old croissants donated to Marin Food Bank

croissantAll unsold and day old croissants donated to the Marin Food Bank in Novato and Marin City.  Croissami is honored to be able to help out the local communities.  The wonderful volunteers at St. Andrews Church and the main location in Novato, are unsung heros of the local food bank

The mission of the Food Bank is to end hunger in San Francisco and Marin. It’s a huge job that’s only gotten harder as the community struggles with a prolonged period of economic distress and record numbers of people are pushed to the point of hunger.

With 120 employees, 25,000 volunteers each year, and 450 partner organizations throughout the community, the Food Bank is vital lifeline for people in need of food assistance.

Croissami would love to encourage other individuals and small businesses to donate to this worthy cause. 75 Digital Drive, Novato and St. Andrews Church, Marin City.  http://www.sffoodbank.org
